As restaurants across the country gear up to welcome diners back at full capacity, there's a lot of work to be done to get everything ready. The pandemic has made cleanliness and sanitation an even greater priority than before. From the moment a customer steps inside your establishment, they're expecting a clean, comfortable environment along with great food. Prioritizing food safety is one of the best ways to protect both your customers and employees, while also safeguarding your business's reputation. To properly clean a restaurant, you can break the process down into four key steps:

Clean:

This involves removing surface dirt and grime. It’s crucial to follow the manufacturer’s instructions when using cleaning products to ensure they’re used effectively. Although cleaning doesn’t eliminate germs, it’s an essential first step because it reduces the surfaces where pathogens can grow. Before washing, any large food particles should be removed through methods like soaking, scraping, or scrubbing. Proper floor cleaning tools and equipment can also play a big role here.

Sanitize:

Sanitization aims to kill 99.9% of bacteria deemed safe by health authorities. To achieve this, you need to mix sanitizers to the correct concentration—too little won't be effective, while too much might pose risks. Always use chemicals approved for foodservice operations. Hand sanitation is equally vital in preventing cross-contamination and spreading germs.

Disinfect:

Disinfection takes things a step further by killing 99.9999% of bacteria and viruses. Focus on high-touch areas such as doorknobs, handles, railings, light switches, faucets, and restroom fixtures.

Food Safe:

Ensure that only approved chemicals are used in foodservice environments. Cover or remove any items that could get contaminated during chemical application. Afterward, thoroughly clean and sanitize all equipment and utensils. Store chemicals separately from food and equipment by keeping them spaced apart or partitioned. Before reopening your dining room, take the time to clean, sanitize, disinfect, and ensure food safety throughout your entire operation. From the floors to the ceilings, make sure your kitchen remains spotless with the right janitorial supplies and equipment.
