Hailing from the city known as "The Big Easy," this recipe brings a bold flavor that’s perfect for game day. The wings are coated in an earthy, spicy rub and can be paired with homemade hot sauce for extra kick. Whether you're a fan of heat or not, these wings are sure to be a hit. Start by gathering three pounds of chicken wings and preparing the rub.
Ingredients for the Rub
- 1 tablespoon baking powder
- 1 ½ teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon thyme
- ½ teaspoon cumin
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper
Ingredients for the Super Sauce
- ¼ cup salted butter
- 1/3 cup Louisiana-style hot sauce
- 2 tablespoons Worcestershire sauce
Mix all the rub ingredients in a large bowl. Pat the chicken wings dry, then toss them in the rub until fully coated. Place on a baking sheet and refrigerate overnight. Preheat your PGS grill to low, cook the wings, then toss them in the warm super sauce before serving.
